CRAIG KNUDSEN - EXECUTIVE CHEF
Craig has spent over twelve years working in renowned Australian restaurants from Margaret River to the Great Barrier Reef and become Milton Park’s Executive Chef in 2017.
Craig launched a wide ranging career in his hometown of Canberra, moving onto Margaret River, Ayers Rock and Broome. Craig’s career progressed to the acclaimed two hatted Sydney Restaurant Tetsuya’s where he refined his craft working alongside some of Australia’s most talented Chefs.
After his tenure at Tetsuya’s, Craig joined the acclaimed and award winning two hatted Royal Mail Hotel, following this Craig returned to qualia shortly thereafter becoming the Executive Chef.
Craig has now joined the Exclusive Milton Park Country House Hotel & Spa in the picturesque Southern Highlands where he brings great passion about creating a unique expression of Australian identity in his culinary creations, reflecting the renowned Estate aswell as his own experience travelling and working around the country. He remains focused on working closely with seasonal, local produce aswell as culturing and harvesting produce from around Australia.
